Chef de Partie

Elite Pubs are looking for experienced Chef de Partie's who will help set the highest standards of food quality.

Your role will be to assist the Head Chef and his team in handling all aspects of the day to day running of the food operation at the pub.

The Chef de Partie is charged with the duty of running a specific section of the kitchen.

Duties and Responsibilities

  • Is involved in the training of junior staff
  • Helps with menu planning and is involved in meal preparation
  • Oversees food preparation, cooking and presentation in the restaurant
  • Enforces health and safety, plus hygiene standards in the kitchen
  • Troubleshoots any problems that may arise in the kitchen
  • Ensures that food reaches the customers in a timely manner
  • Manages and supervises the commis chefs

Skills and Specifications

Must have experience at Gastro Pub Commis Chef Level.


Senior Sous Chef

Kent and Sussex – 7 gastro pubs
Salary £25,000 - £27,000 plus minimum £3,000 net tips
Staff Incentives and Benefits
Live In may be available at a cost of £2,000 per year
Maximum 48 hours per week with 2 consecutive days off

The Role

  • Assist in handing all aspects of the day to day running of the food operation at the pub.
  • Menu planning and involvement in meal preparation in our modern fully equipped kitchen.
  • Oversee food preparation using fresh locally sourced seasonal food.
  • Ensure that food reaches the customers in a timely manner, maintaining the continued high standards that we are proud to have achieved.
  • Ordering produce, staff control, quality and cleanliness, pricing and gross profit management plus waste control.
  • Deputise for the Head Chef.
  • Help to select and train kitchen staff.
  • Handles any problems that may arise in the kitchen.

The Person

  • Will have UK experience at Gastro Pub Senior Chef de Partie level.
  • Be passionate about locally sourced fresh food.
  • Must have a calm personality, be a team-player and be able to help deliver consistently high quality food at all times.
  • Have own transport.

The Role

As the Pizza Area is open plan, your flair and expertise in preparing food with a traditional wood fired Tuscan oven and only using the freshest of ingredients would be on display. We therefore want people with a passion for good food, who are prepared to work as part of a team in ensuring our guests’ needs are met at all times, greeting everyone with a warm welcome as if it is the first time you have seen them.

The Person

  • It is vital that you have an understanding of the relationship between the back of house and front of house, ensuring service runs smoothly and that our guests receive the very high standards they are used to from Elitepubs.
  • Preparing pizzas from initial order to arriving at our guest’s table is an art in itself and you can expect to take pride in every dish.
  • Ideally you’ll have previous experience of working in a busy kitchen and be familiar with the health and safety standards required, as you will be needed to work in the kitchen too as a COMMIS CHEF.
